a perfect start to the day

We first experienced this version of avocado toast in southern California, and have made it this way ever since! The crustier the bread the better, so it’s worth hunting down an artisinal loaf – I like to bake my own rustic sourdough. If you can’t find prosciutto, substitute thinly sliced bacon.

The best microgreen pairings are cilantro, basil or sunflower greens.

 

What you’ll Need

4 slices rustic bread

2 ripe avocados

4 slices prosciutto, lightly toasted

1 tablespoon olive oil

½ teaspoon freshly ground black pepper

Optional: soft-boiled egg

Step 1

Lightly toast the bread and prosciutto. Slice avocado into large chunks and lightly mash onto toast using a fork.

Step 2

Sprinkle crumbled goat cheese over avocado, and arrange tomato slices on top. Using your fingers, crush sea salt over each slice and sprinkle with pepper. 

Step 3

Tear prosciutto or bacon into smaller pieces and arrange on toast. Drizzle with olive oil and top with microgreens and optional egg. Enjoy!
